In the Kitchen with Rossini

Hello, and welcome to Rossini's Kitchen with Ellen. I look forward to sharing some of Rossini's most famous recipes with you. I will also be sharing some of my favorite recipes and hope you will try them in your own kitchen. Rossini, who is best known as a composer, especially his comic operas, "The Barber of Seville" and Cinderella", was also a renowned gourmet. He was especially fond of truffles and foie gras (goose or duck liver), which even in the nineteenth century was considered a luxury. In the coming weeks, I will be sharing recipes created by Rossini, but which can be used in your kitchen without the expense of foie gras or truffles. The best time to try new recipes and really enjoy being creative in the kitchen is when you are also enjoying the beautiful sounds of classical music. So start the music and let's get cooking!

Coupe Rossini:
1 cup heavy cream
2 teaspoons powdered sugar
2 ounces mascarpone cheese
1 vanilla extract
2 cups strawberries
¼ cup granulated sugar
4 ladyfinger cookies
1 cup blueberries
1 cup raspberries
1 cup blackberries
4 scoops strawberry sorbet
white or dark chocolate curls

Directions:
In a mixer using the whisk attachment, beat cream until soft peaks form; slowly add powdered sugar and mascarpone cheese. Add vanilla extract and beat until fairly stiff. Set aside.

Slice the strawberries and add 1 cup to processor bowl; add ¼ cup granulated sugar and process until berries form a smooth puree. Reserve remaining strawberries.

To assemble dessert, use 4 parfait or wine glasses. Break 1 ladyfinger cookie into 4 pieces and place in each glass. Pour about ¼ of the strawberry puree over the ladyfingers. Place reserved strawberries over puree and ladyfingers. Spoon equal amount of mascarpone mixture into each glass. Place blueberries, raspberries and blackberries evenly over cream mixture. Add one scoop of the strawberry sorbet. When ready to serve, garnish with chocolate curls and fresh mint.
